Calcium carbonate rich in clay limestone soil helps the grapes maintain moisture and acidity, perfect for a juicy Aligot. The juice is fermented old barrels for 1 year, and in concrete eggs for 8 more months. Textured, with juicy tropical fruit and minerality.
